Pickled Chioggia Beets

I was browsing over @ Diggin' the Dirt and came across her beautiful pickled chioggia beets. It was then that I recalled I had some garden chioggia beets in the fridge still so I made a batch.

The recipe can be found at the following link. The only thing I change is in place of pickling spice I used, 2 cinnamon sticks, 1 tablespoon whole allspice berries & 1 teaspoon whole cloves. In the end mine turned out pretty red, not the nice blush pink like her jars. I will hope for paler chioggia's next season. They will be ready for a taste test mid Jan, can't wait.

  1. The beets look great! I love beets but no one else in my family does so I don't grow many....Is the flavor of the chioggia beet better than most?

  2. Sunny - chioggia are a fairly sweet & mild flavored beet. They are less dense then other beets, they cook much fast because of this and they also can be sliced thin & eaten raw. I have heard some people call them bland which they kind of are but that may be a good thing for people that don't like beets.

  3. Your pickled beets look beautiful. Chioggia beets are my favorites. I love their bicolor rings. The flavor is not as strongly beety as Detroit Reds, and I like that. Sweet and mild is right.

  4. I grew up eating pickled beets, but haven't had any in probably...25 years? I like them, but my wife would probably snarl her nose at them, I bet.

  5. Like Sunny, only I like pickled beetroot in the family. One of my childhood delights was a cheese sandwich with home-made pickled beetroot on it. Unless I'm prepared to eat it all myself I rarely do them now. Yours look really beautiful.

  6. I agree with EG's wife. Beets blech! Chard is as close as I come to a beet and then I even cut off the stems because they taste too beety. They sure are pretty though. They make a really good Christmas ornament.

I too grew up eating the pickled beets (although I wasn't a huge fan as a kid) and I'm the only one who likes them in our house now, but I still make them for me. I remember when I rediscovered them a few years ago and fell totally in love.

  8. Seems like it is a common occurence to have one person in the family who likes beets and others who do not. My family will eat them but grudgingly and they won't touch the pickled beets. However, I like them so I grow a small patch periodically so I can make up a small batch of pickled beets.

    I love the lighter color of the pickled chioggia beets - makes for a very pretty jar of pickled beets. I hope they taste wonderful for you too.

  10. I've never tried pickling beets like that. I have cooked them and soaked them in a little vinegar before serving with a salad. Thanks for the link - I would like to try this. Your beets look very pretty!
