MMM Birthday Cake

It is my Mom's birthday today, Jan 29th. I won't get into any age details just to be safe. I decided that this year I would make her a hot pink birthday cake from scratch.

I had never tried a cake from scratch before. It turned out to be pretty much as easy as boxed cake mixes and it tasted much better. Two drawbacks of surprising someone with a birthday cake, one you can not leave them the mess to clean up and two you have to bake something else to explain the baking aromas in the house.

  3. whoa, a SIX egg cake, now thats what i call a birthday present. When ever i make a cake, i measure it by the eggs, so the weight of the eggs (with shell) is the weight of the flour, sugar and butter (or marg in my case as my husband cant eat milk) plus a bit of flavouring then for icing, butter and twice as much icing sugar plus flavour... anyway, ive never made a six egg cake, you could feed an army on it :D

    There's a single layer chocolate cake I like to make that has some strange ingredients: coffee & balsamic vinegar. It's delicious with strawberries. I'll try to post it some day soon.

  5. dormouse74 - I will have to try a cake by weight the next time I make one. This recipe sure is rich and the end result is similar to a pound cake.

    Marcia - Yes she was surprised, she is a desert lover/baker so it was the perfect present. Your chocolate cake sounds good, I will watch for the post. This recipe is a little different as it calls for sour cream & cornstarch, that was a first for me.
