Chicken Noodle Soup

This veggie gardener household is ill, thankfully not with the flu. After coming out of my NyQuil induced coma I decided to make some homemade chicken noodle soup. I like to cook when I am sick, is that strange?

I don't follow a recipe, I just poach chicken in water, salt & chopped veg. When the chicken is cooked the poaching liquid is strained & skimmed to be used as the soup broth. I then add diced carrot, celery, onion & mushrooms to the broth along with a bay leaf, sage from the garden & sea salt to taste. When the veg is cooked through I add a couple handfuls of small pasta and diced poached chicken, then cooked until the pasta is tender. Served with fresh chives from the garden that I forgot to add for the photo and buttered twelve grain bread. The only medicine I need, after NyQuil of course.

  2. Hope you are feeling better, that chicken soup should do the trick. We did a variation on the medicinal soup last night in the Balcony Garden, garlic and onion, with some added herbs, helps keep the illness at bay (and not surprisingly most people away too, that garlic is strong) All the best and get better soon
